World-class chef Kelly Fields says Popeye’s biscuits are religion
By Josh Hill
Popeyes is a fried chicken institution sweeping the nation, with glowing endorsements coming from high places.
If there’s one undeniable truth in America, it’s that there’s a new fried chicken king. After years of KFC being basically the default, Popeyes has stormed to the front of the pack and taken the nation by storm.
This is more than a case of Popeyes merely being something different. The chicken chain has carved out a special place in the hearts of those who love southern cuisine and has elevated the fast food game.
Award-winning chef Kelly Fields has handed out a glowing endorsement, calling Popeyes more than just a fast food joint.
Fields not only fully backed and supported Popeyes, but went so far as to call it a religious experience. Specifically, Fields cites those fantastic biscuits as something everyone needs to try at least once in life.
"I’m going to say this, full disclosure, as a restaurant owner of a restaurant known for their biscuits: Popeyes biscuits are a religion of their own. For sure. What puts them in this category? I’m going to go with butter. And it’s not even good butter—it’s pretty cheap butter—but the biscuits taste like butter and hardly anything else. Every couple of months I do a ‘Biscuits and Bubbles’ brunch at my house, and it’s always biscuits, sausage gravy, and tons and tons of stuff. I always get 200 pieces of Popeyes and just have a mountain of Popeyes in my kitchen. It’s amazing—and there’s never as much leftover as I want there to be."
Fields knows what she’s talking about when it comes to food. Her accolades include being a James Beard Award-nominee as well as the co-founder of her own southern cuisine locale — Willa Jean.
So when she hands out an endorsement like this, we listen.
You don’t need to know what any of Fields’ accolades mean. All you need to know is that you were right all along for loving Popeyes biscuits. That’s really all that matters here.
