5. Creamy Tortellini Soup

Time to Make: 20 minutes

Here are all of the ingredients that you will need:

  • 8 cups low-sodium veggie or chicken broth
  • One 1 lb bag frozen peas and carrots (mixed veg works as well – your pick)
  • 10 ounces fresh cheese tortellini (Giovanni Rana is my personal fave brand)
  • 1/2 cup heavy cream
  • Salt & Pepper (to taste, of course)
  • Shaved Parm
  • Croutons
  • Olive Oil (for drizzling)

Here’s Why This Soup Couldn’t Get Any Easier to Make

This soup is super simple, so so will this explanation be! It combines frozen veggies for convenience and already-made cheese tortellini. Add in some fresh Rotisserie Chicken from your local grocery store for both some added protein and flavors! This is certainly one of those delicious recipes that, although it would be perfect for those cold Winter days and nights, it can also go well as a nice and delicious meal-prep dish, and yes, even in the Summer months as well! In my personal opinion, there’s never a bad time for soup; and if you disagree with me, then I really can’t help ya there. This is totally making me crave this right now and it’s like 80 outside! Yumm-oh!
