Tijuana Flats has had a busy last two years. Like Red Lobster, the casual Tex-Mex restaurant filed for bankruptcy in April 2024. However, after hiring a new CEO, James Greco, in June of the same year, the chain emerged from bankruptcy in January.

In celebration of its turnaround, Tijuana Flats has introduced several new menu items, including a new beverage.

Street Taco Trio and Coconut Limeade now available

While Tijuana Flats offers a wide variety of menu items, its latest addition is the Street Taco Trio, which brings back a fan favorite. Returning for a limited time until April 20, the Carne Asada Street Taco features grilled steak, chile lime crema, diced onions, and fresh cilantro on a soft corn tortilla. Also available for a limited time is the Grilled Shrimp Street Taco, made with grilled shrimp, guacamole salsa, cilantro cabbage, corn salsa, pickled red onions, and cotija cheese. The trio served with chips and a lime wedge, is priced at $9.99.

Need something to wash it down? Tijuana Flats has you covered with the new Coconut Limeade, a blend of creamy coconut and zesty lime, topped with Sprite, for $3.29.

Louisville location opening soon

Although Tijuana Flats locations are mostly concentrated in the South, with just five states boasting restaurants, Kentucky is about to get its second location. On Feb. 24, a new Tijuana Flats will open in Louisville, giving those in the area a chance to try the popular Tex-Mex chain. As with any new restaurant, expect some wait times in the early days.

Either way, Tijuana Flats appears to be thriving post-bankruptcy and hopefully will see further expansion in the coming years — giving more people the chance to give it a try.
