Chrissy Teigen’s coconut rice recipe is out of this world

Chrissy Teigen might be most well-known as a model and master of Twitter, but she’s also famous for her amazing recipes and cookbooks. If you follow her on Instagram or Twitter, you’ve definitely seen at least one video of her cooking something that looks so good your nose hits your phone screen trying to taste it.
And according to one PopSugar writer, her coconut rice recipe is just as good as it sounds. How could it not be when two of the ingredients are coconut milk and shredded coconut? Yum! If you aren’t a coconut fan, this is not for you. This is a coconut explosion. The writer even says it fills the kitchen with a coconut aroma. You’ll feel like you’re on vacation right in your home and with the way things are right now, we could all use that feeling.

The recipe is originally from Teigen’s first cookbook, Cravings and is pretty simple to make. Besides the coconut ingredients, you’ll also need rinsed and drained jasmine rice, water, sugar, and kosher salt.
Once you have all the ingredients, begin by toasting the coconut in a pan until it’s light brown and then move it to a plate to cool.
Next, in a pot, mix together the rice, coconut milk, water, sugar, and salt. Let it come to a boil and stir occasionally. From there, turn the heat down, cover the pan, and let the rice simmer until all the liquid is gone. Take the post off the heat, fluff the rice with a fork, and then let it sit for another 5 minutes. Then you just need to mix in the toasted coconut and you have some delicious tropical-tasting rice!
If you’re looking to make this for dinner tonight, you might want to check how much rice you have as it’s been one of the more difficult things to find at grocery stores during the pandemic. But if you have plenty of rice and can pick up some shredded coconut and coconut milk, you’ll have a delicious side dish (or who are we kidding – complete dinner) in no time!
