Chrissy Teigen’s chicken pot pie soup recipe is your next fave fall meal

Chicken pot pie is one of those foods that almost everyone loves. It’s a savory pie, what’s not to like? But Chrissy Teigen has mixed it up a little bit and, according to PopSugar, it’s one of the best things ever. How did we miss it?

Instead of the traditional recipe where you need to make crust and it’s kind of a whole process, she turned it into a soup. It’s much easier to make, but still delicious.

The recipe is featured in her 2016 cookbook Cravings and it includes everything that’s in a chicken pot pie, but instead of making two crusts, you make one sheet and then break it up so you get crust in every bite. Genius!

It all starts with the crust. First, cube the butter and then put it back in the fridge. If you’ve ever made pie dough, you know the key is cold butter.

Then, get out your food processor (or you can do this by hand) and mix the flour and sea salt together. Add in the cold butter and mix until the butter is about the size of a pea. Add ice water and mix again until it becomes a ball of dough.

Split the dough into two chunks, wrap in plastic wrap, and then throw it in the freezer for at least 30 minutes. The butter needs to re-harden so it flakes when you put it in the oven. If you don’t freeze it or at least chill it, you will have zero flakes.

While you’re waiting, preheat the oven to 375 degrees. Once the dough is cool, roll it out into rounds (the recipe says 12-inch ones, but this is not really a huge deal). Prick the dough with a fork so the crust doesn’t puff up too much. Slide it on a baking sheet and put it in the oven for about 30 minutes.

Now to the soup! First, you want to bring chicken broth and milk to a simmer in a pan. Then, in a bigger pot, melt butter and add three cloves of garlic. Cook it for about a minute and then add the flour. Let that cook for 2-3 minutes so the floury taste cooks out and then add in your broth/milk mixture. Add it slowly. You don’t want it to be lumpy. Finish it with salt and pepper.

Bring the soup to a boil, then reduce the heat, and cook for 5 minutes. You want it to thicken so it’s similar to the gravy you find in a chicken pot pie. Next, add your vegetables and ham and let those simmer until the potatoes are tender. It should take about 20 minutes

Toss in the chicken (yes, you’re using rotisserie chicken because Chrissy Teigen knows we don’t have time to cook chicken) and let it warm up for 5 minutes and you’re ready to eat! Serve the broken up pie pieces on the side.
