How to make a mug cake with your Pumpkin Spice Milano Cookies

We love a quick and easy mug cake, especially during winter months. There is something about a warm cake in a mug that just satisfies us. And whether that is because we are satisfying our sweet tooth or indulging in a guilty pleasure, we just really like mug cakes.
And if you have been a Guilty Eats reader for any length of time, then you probably already know how much we also love Milano Cookies. So having a recipe straight from the people at Pepperidge Farm that takes their limited edition, seasonal fan favorite Pumpkin Spice Milano Cookies and transforms it into a mug cake is the kind of magic we are here for.
Pepperidge Farm’s recipe for Pumpkin Spice Milano Mug Cakes
Considering this recipe only requires two ingredients, this really is an easy and quick option for satisfying our sweet tooth as we head into the colder months. So what do you need? And how does this work?
What you need:
- 6 Pumpkin Spice Milano Cookies
- 3 tablespoons of Pumpkin Spice Creamer (you can also use pumpkin spice latte or even milk)
What to do:
In the mug you plan to make and enjoy your mug cake in, place all six of the Milano Pumpkin Spice Cookies. Using a fork, crush the cookies into a coarse crumble. Next, add in the Pumpkin Spice Creamer and then stir the mixture together until you form a batter. Let the mix sit for approximately 30 seconds.
Now it is time for the microwave. They recommend microwaving for one minute and 30 seconds on high. But they do say that depending on your microwave and how ooey-gooey you like your mug cake, you might want to add 10 seconds to that time (any increase in cooking should be done in those 10 second intervals).
Once your mug cake is all baked up, let it sit for two minutes so that it can cool. And then you can top it with whipped cream, a cream cheese frosting, or even just straight up caramel sauce. Or mix and match these toppings. The choice and the cake is yours to do with as you please.
