Get festive with Chex this season and whip up a Sugar Cookie Chex Party Mix

While it’s easy enough to snag a bag of Chex Mix from the store and skip the kitchen, there is something magical about taking the cereal and making your own Mix. And whether you like a savory or a sweet Mix, there are plenty of options for having fun with this iconic cereal.

Obviously, there are no rules when it comes to making your own Chex mix. You put in the ingredients that you want. But if you’ve never made one of these mixes by yourself, then you might want to follow one of their recipes.

We were lucky enough to get a chance to try the gluten-free Christmas Sugar Cookie Chex Party Mix with a little help from Chex, and it is definitely one of our new favorite sweet treats for the holidays. It was delicious, fun to make, and really did remind us of classic sugar cookies (until we started playing with the recipe and taking our sugar cookie to the next level). So if you want to make this delicious mix for yourself, you’re in luck because we have the recipe (with some of our suggestions).

How to make your own Gluten-Free Christmas Sugar Cookie Chex Party Mix

What you need:

  • 6 Cups of Rice Chex Cereal (I did a mix of both Rice and Corn cereal)
  • 1/4 Cup of Butter (Salted)
  • 1/3 Cup of granulated sugar
  • 1/4 Cup of powdered sugar
  • 2 Teaspoons of Pure Vanilla Extract
  • 1.5 Cups of the White Vanilla Baking Chips (the second time I made this I used white chocolate chips)
  • 4 Teaspoons holiday color sprinkles or nonpareils

What to do:

Step 1: Prep your cookie sheet by lining it with waxed paper. Add the cereal to a large bowl that can be microwaved.

Step 2: In a second, smaller microwave safe bowl add the butter and microwave it until it has melted, usually about 20 to 30 seconds depending on the strength of your microwave. Add the granulated sugar to the melted butter and mix. Microwave for another 30 to 40 seconds until the sugar has dissolved in the melted butter. Next, you’ll stir in the vanilla extract. Pour the mix over the cereal and stir until the cereal is coated in the butter mixture.

(This step seemed like a lot of work, but was actually super easy and quick, just make sure you don’t over microwave the butter or the butter and sugar mixture.)

Step 3: Take your bowl of coated cereal and microwave it for 3 to 4 minutes, stirring every minute. The goal is to make sure that the mixture of cereal is entirely glazed. Once everything is glazed, add the powdered sugar and coat the cereal with the sugar. Next, spread the coated cereal onto the lined cookie sheet.

Step 4: In another small, microwaveable bowl (you could use the same bowl you melted the butter in), microwave the vanilla chips for 1 to 2 minutes, at 50% heat. You will want to stir after one minute and make sure that the chips are melted and smooth. Move your melted vanilla chips into a food storage bag, cut off a small corner of the bag, and then drizzle the melted vanilla over the Chex mix you have in the cookie sheet. Immediately top with your sprinkles or nonpareils (I used both). The drizzle will help your sprinkles/nonpareils stick to the mix.

Step 5: Take the cookie sheet and refrigerate your mix for 20 to 30 minutes, in order to let the drizzle set. Now, your mix is ready to break and eat.

It really is that easy and no real cooking is required! As a side note, once you add the drizzle, you can also add unmelted chocolate or vanilla chips to the top as well to add some more deliciousness to your party mix. (Once you have made a mix like this, you will want to have some fun with it and add in little bits you love to add more textures or flavors.)7
