Salads are a great way to feature watermelon. I have a delicious watermelon salad that I used to whip up in the pro kitchen as a great appetizer idea before I turned to a career of writing full-time.
It was always a winner. It consisted of iceberg lettuce, fresh spinach, of course watermelon, cucumber and diced beef jerky. It’s a meal all in one and really on a hot summer day who wants to deal with grills, fire and heat from the oven. Dress the salad with rice wine vinegar and olive oil vinaigrette and you’ve got a great tasting salad. Finish this off with a no-bake cheesecake and you’ve got yourself a party for sure.
Now the other great thing about this wonderful fruit is that serving it can be an art form all its own.
