According to a food blog called DownShiftOlogy, there are just three simple steps to making a vegan cashew alfredo sauce. First, make sure to soak the cashew nuts overnight that way that really have ample time to get soft and ‘blendable’ to become a sauce. Then, place them into a blender along with garlic, lemon juice, onion, nutritional yeast (for that classic cheesy flavor), and some herbs. Finally, just blend it all together until (your) desired creamy consistency. Yes, that’s literally it. This looks super tasty!

2. Cacio E Pepe Sweet Potato Noodles

This recipe combines a delicious and healthy creamy sauce alongside a pasta alternative, voodles, otherwise known as, veggie noodles! Personally, I love sweet potatoes and I’ve always wanted to use a veggie spiralizer, so this recipe will definitely be on my list of ones to try. Here’s how to make the delicious, but healthy alternative, to a classic fave sauce: all you need is butter, oil, tons of pepper, and tons of parmesan cheese. That might even be easier than the precious sauce recipe!

3. Carrot Gnocchi

Here are all of the ingredients that you’ll need to make a much healthier and sweeter version of everyone’s favorite pasta pillows: 1 lb. of carrots, olive oil, salt, coriander, white pepper, water, sour cream, 1 large egg, and all-purpose flour. Basically, all you do is cook the carrots, mash all of these ingredients together and then cut into your desired gnocchi sized pieces and cook them up! Pair these with whatever sauce you like, but go with a nice simple classic – a brown butter sauce!

4. Butternut Squash Lasagna

If you’re a lasagna lover, then this recipe is just for you! Nothing about the sauce or other ingredients are different, you’re just replacing the noodles with super thin slices of butternut squash. This recipe is perfect for those that love those classic Fall flavors when the weather is just between cold and the end of Summer sort of weather. I’m so in for it no matter the time of year!

5. Burrito Zoodles

This particular ‘zoodles’ recipe really intrigued me because I’ve truly never seen a recipe like this ever before. Pretty much, you just take all of your most favorite burrito ingredients, such as refried beans, cheese, tomatoes, corn, sour cream, etc., you spiralize your zucchini noodles, and voila! Dinner!

6. Sheet-Pan Burrata Caprese Gnocchi

This takes your favorite super dense and pillowy classic-style potato gnocchi and combines it with a caprese salad on skewers! This one is quite possibly the most interesting recipe of this bunch because I never, in my wildest of dreams, would’ve thought to add in some smoked salmon into my pasta…like ever! Find a recipe for some delicious garlic butter or lemon marinated salmon, pick out your fave noodles, add in some capers and a light lemon cream sauce and you’re done and will be eating super healthy!
