It was just last week the we at Guilty Eats reported that Jack in the Box, the west coast fast food chain, was making some extensive changes to their menu. Bringing back old items, adding entirely new ones, it had all the makings of a menu overhaul.

Of course, this shouldn't come as a surprise. Fast food chains regularly change their menu options in an eternal quest to keep customers (and stock holders) happy. It may not be to the extent Jack in the Box is attempting, but as a chain that sits behind McDonald's, Burger King and Wendy's, you have to try something.

Now word has come that the changes and tinkering with the Jack in the Box menu isn't over. Apparently they are testing a brand new item in the Texas area that looks pretty amazing. They call it the Birria Grilled Cheese Sandwich and it could be a winner.

The Birria Grilled Cheese Sandwich is available at Jack in the Box for a limited time.

Now, for those wondering what exactly birria is, here's a quick primer. Birria is a Mexican stew that can be made from a variety of different meats, in this case beef. It is marinated in an adobo made of vinegar, chiles, garlic, herbs and spices and is then finished off in a broth. And if you've never had it, you really should change that.

Jack in the Box's Birria Grilled Cheese Sandwich comes in two versions. There is the Classic Birria Grilled Cheese and the Double Birria Grilled Cheese.

The Classic Birria Grilled Cheese includes shredded, seasoned birria beef topped with American cheese and then put between two slices of toasted sourdough bread. It also comes with a side of birria sauce for dipping.

The Double Birria Grilled Cheese doubles both the birria beef and the cheese (hence the name) and then stacks it all like a gooey, delicious club sandwich, with three slices of toasted sourdough bread. And you also get the birria sauce to dip it into.

Both items are currently being tested in select Texas locations for a limited time. One can only hope that eventually Jack in the Box will realize the rest of the country needs to be able to try this, but until then, if you live in the Lone Star State, enjoy and let us know how good it is.
