Friday Favorites: JUST Egg gives us a plant-based alternative to typical eggs

Thanks to JUST Egg, which is made using mung-bean and no chicken products, you can enjoy a delicious, healthy breakfast anytime of the day or night. And considering they have some amazing recipes on their site to try with their product, you will definitely want to give this a try at least once.
From Veggie Omelets to Mini Quiches, there are a lot of different recipe options to choose from. In order to give JUST Egg a try, I went with their recipe for Strata, which is very much like a casserole meets quiche.

As someone who is not Vegan and has no plans to be anytime soon, I was interested to see how JUST Egg lived up to regular eggs. And for me, I was surprised to find that I did not miss my standard chicken eggs.
The Strata was amazing and showcased just how amazing the mung-bean based JUST Egg is as an alternative to the traditional eggs we often use in dishes like this. Perhaps it was the addition of all the amazing flavors like garlic, rosemary, and mushrooms, but this was an amazing dish to begin with.
This product really did live up to the hype in terms of scrambling like real eggs, and also cooking like them too. In fact, I am excited to try some of the other recipes they have listed on their site, and maybe even give French Toast a chance with this alternative to eggs.
For me, this was a chance to try something new that I would normally not reach for first. And yet, now it feels like a product I will reach for before I even consider that package of eggs in the cooler.
